Jonathon Sawyer

Chef Jonathon Sawyer is a James Beard Award-winning chef known for his restaurants in Cleveland and Chicago, including The Greenhouse Tavern and Kindling. He's also a cookbook author and a television personality, appearing on shows like "Iron Chef America" and "Dinner Impossible". Sawyer is a strong advocate for sustainability and locally sourced ingredients.

Hillary Sterling

Born and raised in Brooklyn, Hillary got her start bussing tables in Montauk before earning a business degree from Indiana University and a Culinary Arts diploma from Le Cordon Bleu in Chicago. She began her career at Bobby Flay’s Mesa Grill, later joining Bolo and Lupa, where she deepened her love for Mediterranean and Italian cuisine.

In 2010, she became chef de cuisine at Michelin-starred A Voce under Missy Robbins, honing her understanding of regional Italian traditions. Most recently, she was executive chef and partner at Vic’s, earning a devoted following for her thoughtful approach.

Paolo della Corte

Recently appointed as Executive Chef of Four Seasons Resort, Paolo Della Corte is an Italian in love with Mexico and its cuisine. He has worked with some of Europe’s top Michelin-starred chefs, including Joël Robuchon (L’Atelier Saint-Germain, Paris), Heston Blumenthal (The Fat Duck, London), and at prestigious restaurants such as Rossellinis at Palazzo Avino on the Amalfi Coast, San Domenico in Imola, and La Torre del Sarracino.

His refined style blends tradition with innovation, shaped by his time at acclaimed kitchens like Restaurant Giovanni Rana. Today, he brings his culinary expertise and passion for excellence to NOBU Hotel Los Cabos, crafting elevated menus to match the hotel’s breathtaking setting.
